There are many variations of escoveitch fish made in Jamaica .but the original traditional one without the lots of new and commercially made ingredients and seasonings that many individuals try to out do each other. But the traditional old time recipe is still the best and greatest. When properly done flavour the real tastes of the fish is highlighted and not the seasonings,
Jamaican escoveitch Fish
Its still the fresh fish from the sea snapper, bonito, parrot, yellow tail, same old sea salt, black pepper, scotch bonnete peppers, of varying colours like red, green, yellow orange the better, pimento seeds and lots and lots of onions, thyme and a few cloves of garlic. you can use Sweet peppers, chocho and carrots juliennes strips as garnish and decoration. cane vinegar and a little brown sugar

There are many individuals who make the escoveitch sauce with lots water added before hand. Because they are afraid that the fish may get soggy or spoil. They just pour this on when serving or a little before.
These individual have missed the mark. You make sure you use adequat amount vinegar and as little water as necessary if you wish the fish to stay for days and the flavour keeps on developing.
Before frying, the fish must be thoroughly dried . The black pepper and the salt blended together . If the fish is too large put a slit in the sides. To be really Jamaican and authentic using 1/2 to 1 pound sizes fish is ideal but any size and type can be used. Just make sure it is well salted with enough black pepper.
To fry put a frying pan on the stove with enough oil to fry shallow fry. The oil must be very hot but not to burn the fish. Fry on both side until the fish is cooked.
Make sure you do not let the oil burn. if it does pour it off. clean the pan if there is some lightly brown caramel in the pan you could leave it or add a little of the sugar to slightly brown.
Pour in fresh oil slightly heat add all the ingredients above , a little salt to taste, peppers ,carrots, chocho ,onions garlic, sugar, pimento seeds, vinegar enough that will give the fish a good soak . You can add a little water here.

Pour all this on the arrange fish in a dish. You can spoon on this mixture by tilting the dish and take up spoonful that was missed on parts fish in the first pour.
When consuming a serving of this fish
